Cottage Cheese Is My Jam

Ok, it’s not the sexiest food, but here are a bunch of delicious ways to prepare it.

I’ve recently heard it said that cottage cheese is “The next Greek yogurt”, and I say about time. I love it!

I’ve been yammering on about cottage cheese ever since I did the Body For Life program years ago. It’s a staple of my diet, and my fridge is never without. It’s a good and inexpensive source of protein, and it’s available fat-free. I have several ways to prepare it, some where it’s indistinguishable as cottage cheese.

Here are some delicious ways I incorporate the versatile dairy product into my diet.

Protein Pancakes-

These are so good. I eat them any time of day, not just for breakfast.

The 3 main ingredients are old-fashioned oats (dry, uncooked), liquid egg whites (in the carton, like Egg Beaters), and cottage cheese.

Take one part of each of the 3 ingredients (I use 1/2 cup each, for 3 large pancakes) and put in food processor.

To that add a dash of salt, some cinnamon, and dash of vanilla extract.

Turn that food processor on until it’s all a batter-like consistency. Coat a non-stick pan with cooking oil spray and cook those suckers up.
