I’m not sure how the titles are handed out. But yes, they will go away if you don’t keep writing in these subjects. I had Photography for about 2 days, then it was gone for weeks, then came back recently.

I do write in these subjects a lot, but I’m not terribly prolific, nor are my articles terribly popular. I’m just glad to have the tags, for what they’re worth (and I’m not sure what they’re worth).
